Properly prepared steak tartar is excellent, but I like a seared outside and a red inside for more flavor.FYI - Echo is starting to blog also. So the raw meat was good. Erin was even in the mood for the same meal recently. It's more of a sandwich than a steak, but it wasn't bad.Anyway. It's good to hear from you, Jim. It's good to know that we aren't the only crazies eating raw meet. :-) I am about to check out the ECHO blog.
